Copycat recipe: Basil Pesto Chicken Power Bowl Frozen Dinner

I am a terrible cook, but since figuring out that frozen dinners do not involve much pre-cooking, I’m attempting to copy some simple frozen dinners I spend $$ for at the supermarket. The aim is to not only save money, but avoid dangerous food allergies.

This is my version of the Healthy Choice Basil Pesto Chicken Power Bowl. Carb count: 16-20, depending on use of added pasta.

Ingredients:

riced cauliflower

1 can of butter beans

canned diced or petite diced tomatoes

1 jar Barilla Pesto (or your favourite brand)

chicken breast or leftover roast chicken meat

optional:

canned or fresh mushrooms

1 to 1 1/2 cups cooked ziti or macaroni pasta

Cook chicken thoroughly. Cut into pieces. Cool. Set aside.

Lay out 3-4 shallow freezer containers.

Layer cauliflower, optional pasta (which I did not do when assembling mine), beans, tomatoes, and then chicken and any additional ingredients you want to add (like mushrooms). Divide jar of pesto evenly between freezer containers as top layer.

Freeze for up to about 3 months (this is a guess).

When ready to eat, cook in microwave for 5- 7 minutes, depending on microwave wattage. My microwave is only 700 watts, putting cooking time to closer to 7 minutes.
